As we near the end of the holiday season and the body starts to feel the wear & tear of the booze fuelled weekends & late nights it has endured, it may be necessary to kick yourself a couple of times to get going in the mornings. Here is a classic cocktail with a couple of tweaks to help get the heart started and overcome that terrible racket inside your head.
My Bloody Mary:

Ok, so it is a national heat wave. Adelaide & Melbourne have seen all sorts of records tumble in recent weeks and the rest of the nation is following suit. Red wines are looking far less inviting and the crisp white wines & summery cocktails are becoming more enticing.

Try this cocktail by Daniel Gregory - 2007 Mix & Win Winner.
Glass: Martini
Garnish: the one I saw had a hand made toffee music note floated on top
Method: shake & strain
Ingredients:
30ml Mozart Black
30ml Matusalem Classico Rum
10ml Disaronno Ameretto
10ml Vanilla Monin Syrup
30ml Lemon juice
20ml Honey with chilli flakes
Note:
The honey was stirred with the spirit before ice was added to break it down, otherwise the honey would become hardened globules when shaken with the ice.

The arrival of the Christmas season inspired this recipe:
45ml blended Irish whiskey, 15ml Mozart Gold liqueur (baileys is ok), 15ml Frangelico, 1 Scoop of vanilla ice-cream.
Combine all alcohol over ice in a high ball glass. Stir and top with ice-cream & a little grated nutmeg.

I remember making this for two ladies who came in to the restaurant looking for something that would be enjoyable to drink but also prepare them for the 8 course degustation meal they were about to undertake. It turned out that they ordered three each!
Recipe:
60mls Belvedere Pomarancza 30mls gomme/sugar syrup Juice of 1 lemon 1 egg white
Method:
Combine all ingredients in a cocktail shaker with two scoops of ice. Shake well until there is a thick creamy froth and serve in an old fashioned glass.
Garnish:
Float orange flowers on froth. If you like you can rim the glass with a citrus sherbet.

I know it’s a cliché and I know it’s been done to death, but the Caiprioska is possibly the best addition to the global cocktail scene in many decades. This is undoubtedly my favorite of the sophisticated cocktails. When I was creating the cocktail list for Bamboo Restaurant & Bar I found the recipe in an old cocktail book. I loved the name and am a little partial to a martini so the opportunity was there.
