Allow the Customer to Spend!

I was recently out and about in the lovely city of Gothenburg, Sweden.  My wife and I were showing an Aussie friend around our new town.

Inevitably it came to the point in the day when our thoughts turned to where we can have a feed and a few drinks.  We found a nice outdoor bar attached to a boutique style hotel in the heart of the city centre.  It has quite a large outside seating area, which is perfect on a warm (Swedish style) Summer’s day. So we stroll in, looking for a table, with the full intention of parking ourselves there for the [read more...]

A Cracking Bloody Mary

As we near the end of the holiday season and the body starts to feel the wear & tear of the booze fuelled weekends & late nights it has endured, it may be necessary to kick yourself a couple of times to get going in the mornings.  Here is a classic cocktail with a couple of tweaks to help get the heart started and overcome that terrible racket inside your head.

My Bloody Mary:

150ml tomato juice,

15ml lemon juice,

10ml soy sauce,

Green Chartreuse

The first things that come to mind when I hear the word Chartreuse is; shots, vomiting and hangover! I don’t know if it’s our Australian way to just slam down anything that requires understanding and appreciation, like Tequila, Sambuca or Raki to name a few, or whether it is just best drunk that way, but Chartreuse certainly doesn’t get the credit it’s due.

Still, in this day & age only 2 monks know the recipe, ingredients and production process of the magical green elixir, ‘The Elixir of Long Life’.  The recipe dates back to 1605AD in Paris, but was only produced in [read more...]

Belvedere Vodka

This luxury handcrafted vodka is produced in small batches & distilled 4 times to ensure that the flavor and mouth feel are unchallenged for their quality.

There is much debate in the world of vodka as to who holds the higher ground with fierce competition between brands such as the iconic Grey Goose, new kids on the block 42 Below and other key players like Kettle 1, Armadale and Jewel of Russia.

For a spirit that has such a neutral taste, the competition is more focused at production and key ingredients than that of more distinct flavored spirits like scotch or rum. [read more...]

Sour Orange Blossom

I remember making this for two ladies who came in to the restaurant looking for something that would be enjoyable to drink but also prepare them for the 8 course degustation meal they were about to undertake. It turned out that they ordered three each!

Recipe:

60mls Belvedere Pomarancza 30mls gomme/sugar syrup Juice of 1 lemon 1 egg white

Method:

Combine all ingredients in a cocktail shaker with two scoops of  ice.  Shake well until there is a thick creamy froth and serve in an old fashioned glass.

Garnish:

Float orange flowers on froth.  If you like you can rim the glass with a citrus sherbet.

The name says it all; 43 different ingredients & it’s a liqueur. Ingredients include fruit, herbs, & citrus all selected from the prime mediterranean basin.

I have seen it on shelves but never taken the step of ordering one or asking what it is. Well, I can now safely say that I know what it is.

While most people go about their normal lives, another world exists around them. These normal folk constantly visit this other world. They frequent its shores and bask in the sunshine of its hospitable environs, for this is a land of pleasure. Where dreams come true, promises are made, deals are brokered, events are celebrated, and life in general is enjoyed.

For the citizens of this great land, it can weigh heavily upon our shoulders indeed, to ensure that while all this celebrating and enjoyment is taking place, the visitor remains totally unaware of what is unfolding behind the curtain.
