Allow the Customer to Spend!

I was recently out and about in the lovely city of Gothenburg, Sweden.  My wife and I were showing an Aussie friend around our new town.

Inevitably it came to the point in the day when our thoughts turned to where we can have a feed and a few drinks.  We found a nice outdoor bar attached to a boutique style hotel in the heart of the city centre.  It has quite a large outside seating area, which is perfect on a warm (Swedish style) Summer’s day. So we stroll in, looking for a table, with the full intention of parking ourselves there for the [read more...]

A Cracking Bloody Mary

As we near the end of the holiday season and the body starts to feel the wear & tear of the booze fuelled weekends & late nights it has endured, it may be necessary to kick yourself a couple of times to get going in the mornings.  Here is a classic cocktail with a couple of tweaks to help get the heart started and overcome that terrible racket inside your head.

Sour Orange Blossom

I remember making this for two ladies who came in to the restaurant looking for something that would be enjoyable to drink but also prepare them for the 8 course degustation meal they were about to undertake. It turned out that they ordered three each!

Recipe:

60mls Belvedere Pomarancza 30mls gomme/sugar syrup Juice of 1 lemon 1 egg white

Method:

Combine all ingredients in a cocktail shaker with two scoops of  ice.  Shake well until there is a thick creamy froth and serve in an old fashioned glass.

Garnish:

Float orange flowers on froth.  If you like you can rim the glass with a citrus sherbet.

Chicago 1951

This is undoubtedly my favorite of the sophisticated cocktails.  When I was creating the cocktail list for Bamboo Restaurant & Bar I found the recipe in an old cocktail book.  I loved the name and am a little partial to a martini so the opportunity was there.   All that had to be done was test the recipe, a couple of times in fact - just to make sure, and I guess you can figure out the rest.  Here it is as this week’s cocktail.

Just be careful, after drinking one of these you may feel inclined to find a girl [read more...]
