Allow the Customer to Spend!

I was recently out and about in the lovely city of Gothenburg, Sweden.  My wife and I were showing an Aussie friend around our new town.

Inevitably it came to the point in the day when our thoughts turned to where we can have a feed and a few drinks.  We found a nice outdoor bar attached to a boutique style hotel in the heart of the city centre.  It has quite a large outside seating area, which is perfect on a warm (Swedish style) Summer’s day. So we stroll in, looking for a table, with the full intention of parking ourselves there for the [read more...]

Sommelier

We had an incredibly talented sommelier at the last restaurant I was working at.  He was one of the select few in Australia with official recognition as a Sommelier, and he definitely knew his stuff.

He had a thorough knowledge of any wine from pretty much any region around the world and his ability to dissect the wine and match it perfectly to any dish was astounding.  Add this to his ability to sell obscure wines from places like Spain and Portugal to the discerning Aussie public (who can be religiously patriotic to their own product), and you can understand why he was a recognised [read more...]

Jolleys Boathouse - Adelaide

You’re in the city but you’re not in the city.  You’re on the banks of the Torrens River and it seems miles away from the hustling, bustling streets of Adelaide’s CBD.  You’re also at Jolleys Boathouse - it’s one of those great locations in Australia where some lucky bastard has the fortune to hold a liquor licence for a premises which contains a commercial kitchen and a dining room of around 100 seats.

I love going to Jolleys, especially during the day, I can just sit there for hours sipping wine and eating food as I watch red faced joggers pass [read more...]

Nu Nu - Palm Cove

I always knew I was going to Nu Nu.  Even before I knew I was going to Palm Cove I was going to Nu Nu. So as soon as I was checked into the resort, I checked out Nu Nu.  My partner was convinced I was way over excited.  But I’d read the reviews and checked out the website and I knew my eagerness wasn’t unwarranted.

It had been around 9 years since I’d lived in the resort town and I was keen to take a stroll along memory lane, aka Williams Esplanade.  Some things had changed while some remained the [read more...]

Training Your Staff

Continual training will not just leave your team with no excuses to be abreast of what’s going on in their establishment.  It will also challenge you as a manager to stay at the cutting edge of what’s happening in the industry.

It’s damn well near impossible to hold a training session where you’ll get a 100 percent turnout.  Don’t let yourself get bogged down trying to find the perfect day for everyone.  Plan your meeting and set the time. If your training sessions are made fun and interactive, you get started on time and your staff gain something relevant and informative, [read more...]

Room Service to Russell Crowe

Hello again,

Another week has rolled over in my hospitality life.  I was going to say it is like ground-hog day!  But this is not true.  I do arrive through the same door, at the same time, I do the same things and set up the venue the same way and I offer the chefs and reception staff the same coffees at the same time.  There are many things in my day that are the same but there is one thing that is never the same, service!

After last week’s introduction and outline of my philosophies I want to move away from [read more...]
